At the foot of Gruyères, local farmers' milk is turned into around 48 wheels of Gruyère AOP a day. Come between 9:00 and 12:30 to watch the cheesemakers at the copper kettles from the gallery, then taste the cheese at 6, 8 and 10 months of ageing.
