Banh Da Cua (Hai Phong Crab Noodle Soup)

Hai Phong’s signature noodle soup of wide, chewy white or brown rice noodles in a crab and pork-bone broth, often topped with pork balls or chả lá lốt. Locals eat it at street stalls from dawn to midnight, and the noodles come from villages with a 700-year noodle-making history.
