Bun Bo Hue in Its Hometown

Hue's signature rice-noodle soup is heartier than pho: beef brisket plus pork hock and blood cubes in a red broth seasoned with lemongrass, shrimp paste and chilli, finished with herbs and lime. It is usually eaten at breakfast at local shops, often on low stools on the pavement.
