Egg coffee was born in Hanoi during a milk shortage in 1946: egg yolks whisked with condensed milk into a custard-like foam float on strong, bitter coffee. Try it where it started, at Cafe Giang, then sample iced milk coffee slow-dripped through a phin filter on a tiny street-side stool.
