Hue's cooking grew out of the Nguyen court, where chefs made small, beautifully presented dishes, and many of those bites live on as everyday snacks: banh beo steamed in tiny saucers, banh nam folded in banana leaf, translucent banh bot loc and crispy banh khoai.
