West Lake Shrimp Cakes (Banh Tom)

Banh tom is a West Lake specialty: shredded sweet potato battered and pressed around a whole shrimp, then deep-fried until crisp. Wrap it in lettuce, dip it in fish sauce and pair it with a cold beer by the lake, ideally after watching the sunset.
